I haven't made my own, but when you're ready go to ebay for your beans. I just bought one pound for $13. Yes one pound of extract grade vanilla beans for $13. That's a lot of vanilla beans. Enough that I gave a bunch away and still have a year's supply.

I know Amazon had a fairly decent price for vanilla bean but I don't remember if it was as good as that.

Im still using vanilla I got from the Dominican when a friend went--it is the pure stuff and it cost a quater for 12 oz. She brought me 10 of them.

We use vodka when we make vanilla. I'd have to look up on the internet how many vanilla beans I use; I don't remember. Now I just top off my jar with more vodka from time to time, and add beans as I think I need too. After I've used the beans a while I will split some and scrape them into the vodka. Scraping used beans into milk for homemade ice cream is what I do when I make it (not very often). There are different kinds of vanilla beans also; Tahitian and bourbon if I remember correctly. I've not tried both, but I'd like to get some of the kind that I don't have and use them both together, or make a jar of each and compare. I think that I have Tahitian beans now; I have had them a while so I should evaluate their freshness for future use. I too would like to know who Bill bought the beans from, sounds like a great deal!!! Dee

What kind of alcohol (bourbon, vodka, rum) appears to be a personal preference. I haven't made my own...yet, but I see 3 beans per cup of alcohol as a common measurement. Like many things it really depends on how strong you like your extract. Some people use 1 or 2 beans for the same amount of alcohol. Then it has to rest on a dark place for a number of months (2-4). This is something I've been meaning to do (I use vanilla constantly and my son's diet requires no additional sweeteners--something hard to find these days). I just haven't been bothered enough to order vanilla beans online or stop at a liquor store until I run out of our huge organic bottle. Which is silly, since it takes so long to cure. I should get on this. I've been hoping for more recipes on here from been-there-done-that folks. I figured when the time came I'd wing it and then modify it the next time.

We only used vodka and vanilla beans. The directions I got with my beans had a recipe that also used corn syrup, but I've not made them that way. My directions called for ten beans for 1/2 gallon vodka, and let it set for 8 weeks. That sounds about right for what I did. I didn't split the beans right away; I split them later for making homemade ice cream or for adding back to the vanilla when the beans themselves weren't doing much. I keep re-using the beans as long as possible, topping off my vanilla bottle and adding new beans when it looks like I need to. Dee

Thanks Sharon-Marie!!! I have never won a forums contest before! I also wanted to add that shaking the vanilla mixture daily will help it get done faster; I forgot a lot though! Dee

We used a small bottle of spiced rum. We had some vanilla beans that were all dried out (improperly stored), so we snapped them in half so they'd fit in the bottle and put them in. We didn't split or scrape them. There was maybe 10 or 15 beans before we broke them in half. We stored it in a cupboard and shook it periodically and it turned out great. You will know it is done when it is dark colored and smells more like vanilla than like alcohol. This year we're buying a big bottle of rum and making a bunch to give as Christmas gifts.
