So...what's for dinner?

We had cheeseburgers and fries tonight.

I grilled chicken breasts on the George Foreman, then slathered them with BBQ sauce and have 'em in my toaster oven at about 170* waiting for hubby to get home.

Plus, stuffing (stove top, but not Stove Top, LOL!) and roasted sweet potatoes.

cut up some boneless chicken breasts, stirfried them with some onion powder, salt, pepper, garlic and a quick dash of soy sauce...made fried rice rice a roni and mixed the 2 together, fast, easy, popular and reasonably nutritious. I add some frozen veggies in the rice, usually corn since my kids love corn!

I make a lot of "one dish" type meals, they're fast, reasonably nutritious, and cheap! Just the thing for us working mom types!

Last night was waffles and sausage/bacon. I have to let you know that we pronounce them waff-lees because it just doesn't seem right to let you think waffles.

I shredded left over roast, put it in the crock pot with beef broth on low all day, then drained the beef. Rolled the beef in tortillas with pepper jack cheese. Covered with verde sauce and the drippings from the drained beef and some more pepper jack cheese. Covered, then baked at 350 for 30 minutes. Uncovered and baked another 20 minutes. Served with green salad. It was very good. I've got to put this in my recipe file for later. I tend to make something and then forget how I did it unless I write it down.

We had a mishmash dinner tonight. I had a fruit smoothie w/ a scoop of protein powder. DD had scrambled eggs, granola, and some smoothie. DH had nachos.
